Muffin Cases

Right so that was summer – now we are on to rainy days, cold nights and eating our way into a warmer season.

At Mama Feel Good! We have an ongoing friendly bake off battle, which in truth has been quite sporadic of late but I thought I would share with you the recipe that featured in the last Mama Feel Good! Bake Off – my recipe for Triple chocolate Muffins. I firmly believe that I won the last battle with this recipe but with no official adjudicators it was a hard one to call. So Bobbalin I am ‘calling you out’ come and have a go if you think your cake is moist enough. I am ready, my tins are greased and my oven is preheated at gas mark 6… Bring it!

Triple chocolate Muffins

9oz plain flour
1oz cocoa powder
2 tsp baking powder
1 tsp bicarbonate of soda
3oz dark choc
3oz white choc
4oz milk choc
2 beaten eggs
284ml soured cream
3oz light muscovado sugar
3oz melted butter

Preheat the oven to 180 / gas mark 6

Get some cute muffin cases or just grease up your muffin tin.

In a big bowl combine your flour, cocoa, baking powder, bicarb, and your smashed up chocolate. In a separate bowl mix your eggs, soured cream, sugar and butter.

Now add your sloppy mixture to your chocolate mixture – but don’t over mix.

Generously wang it in your muffin cases or your muffin tin.

Bake for 20 mins…then get them out leave them to cool a little and SCOFF!
